Parsley root is a variety of parsley of which not only the smooth, dark green leaves but also the thickened taproot can be eaten. The fresh leaves are used as seasoning for many dishes such as soup and carrots. The taproot can be used to season dishes or eaten purely as a vegetable. Perhaps a superfluous remark: first use the leaf and then the carrot, and not the other way around.

Parsley root can be sown as early as March, but the germination time is long. At higher soil temperatures germination is considerably faster. Keep a row distance of 30 cm and thin out in the row at 1 cm. As there is continuous regrowth one can cut from the same plants for months on end. The fresh leaves can be used in various dishes. Height about 25 cm. The roots are not hardy, give shelter or ensilage.
